Here are the dinner recipes I am planning for this week: Monday Parmesan Fried Fish Cheddar Potato Strips Quinoa Broccoli Tuesday Easy Chicken Pot Pie Salad Wednesday Mexican Beans and Rice Thursday Chicken Noodle Soup Bread Machine Buttery Rolls Friday Cheeseburgers Oven Roasted Potatoes Carrots
I am a homeschooling mom of four children under 9 who insanely adds two blogs, freelance writing,a piano student here and there and occasional ministries at church to my already crazy schedule. When someone mentions the concept of once-a-month-cooking to me,my eyes glaze over really fast. A full day in the kitchen easily stretches into 3 for me by the time I add in the typical interruptions. While I love the concept,I have decided it is not for me. However,Crystal of Money Saving Mom has made the idea of smaller batch cooking popular. I have recently tried to keep a step ahead of my family’s voracious appetites by doubling a meal, cooking one and saving one for the freezer. Does this work for real food? Absolutely! Right now,I have an extra pan of baked oatmeal in the freezer,a cheeseburger meatloaf without the cheese on top and a batch of waffles. All of this required no extra time on my part this week since I simply doubled up what I was making and put the extra in the freezer. I do this with breads, too. I just make two loaves of cornbread, banana bread or whole wheat bread instead of one. If we have leftover pasta or rice after a meal,I throw it into a gallon plastic bag and save it. Both of these heat up for a quick lunch. We added spices, butter, shredded cheese and chopped sundried tomatoes to leftover spaghetti this week, and it was delicious! When you brown ground beef for a meal, brown an extra pound or two and put a bag of it in the freezer for a quick meal later. When I make chicken stock,I freeze it in two cup portions in sandwich bags. These thaw quickly for a quick soup or chicken enchiladas. One thing that doesn’t seem to work is soup. I make a double batch every time, and we almost always seem to finish or nearly finish the extra portion. I guess we are just eating more! What are your favorite real food freezer meals? Did anyone but me,um,overindulge just a little this last week? O.K. maybe I’m the only one. Regardless, even my husband has been asking for salads in the week to come. So,here’s my “recovery”plan for our weekday dinners AND a giveaway to help you get back on track with eating real! MONDAY:Turkey Stirfry over Brown Rice,Salad TUESDAY:Cheeseburger Meatloaf,Quinoa w/Tomatoes and Basil,Green Beans WEDNESDAY:Turkey Stew,Santina’s Bread THURSDAY:Parmesan Fried Fish,Roasted Sweet Potatoes,Broccoli FRIDAY:Date Night I was very blessed by Annette Reeder of Designed Healthy Living with an e-book copy of a Bible study she wrote with Dr. Richard Couey. It is based,in part,on the research done for one of the classic books on Biblical nutrition,What the Bible Says About Healthy Living:3 Principles that Will Change Your Diet and Improve Your Health by Rex Russell. I admit I’m a little nutty about food science, and there was just enough in this Bible study to give it credibility. However,I was amazed at how the study of food in the Bible could help me grow spiritually! The Bible study, which is called Treasures of Healthy Living,is about so much more than food. I was very pleased with its thoroughness and its Biblical accuracy. Annette and the folks at Designed Healthy Living want to bless you with your own copy of the Bible study. If you would like to win your own copy of this 12-week study, leave a comment below. For an extra entry, subscribe to Growing Real via e-mail or RSS and leave a separate comment letting me know you did so. The giveaway will be open until Friday,December 2 at 12 Midnight EST. Linked to http://www.giveawayscout.com “DearJesusThankyouforourfoodAmen”,prays my 3-year-old while simultaneously digging into his plate. We grin, then sigh and patiently try to tell him to stop and really be thankful instead of praying as a religious exercise. He just grins at us around a mouthful of potatoes. It’s hard for me to get too upset with him. After all,how often do I really stop and thank God for what is on the plate before me? Yes,we stop to “say grace”before every meal. I even quietly drop my head when dining alone. All too often, however,it seems to be just another religious habit instead of heart-felt thanks. It didn’t used to be that way. Back when everyone farmed their own food and many sold food to others as a livelihood, thanksgiving was in order. The family knew all too well Who was responsible for the bounty on its table. They had lived through lean times when their best efforts were rewarded with heavy rains, drought or pests. The Pilgrims knew it. As they gathered with their Native American friends that first Thanksgiving, they still keenly felt the frigid air of the previous winter with inadequate shelter and the pangs of hunger when there was little sustenance to be had. They were truly thankful for the new friends that taught them how to survive in this new, wild land. I’m sure thanksgiving poured freely from their lips, welling from their hearts,as they celebrated. Our family will eat a bountiful meal today:turkey that none of us raised or slaughtered but came neatly packaged in the case at the store, pumpkin pies made from cans of pumpkin, and cranberries that none of us harvested. The further away we get from the creation,it seems the less we think of thanking our Creator. Just one more reason to eat God’s food,God’s way. Let’s not forget to truly thank Him today and every day! Although I’m not going to try all of these, since I’m going to my mom’s for Thanksgiving dinner this year,I have all these saved to try at some time. The ones marked with an * are the ones I am going to try this year. Allergen-Free Dishes for Thanksgiving Dinner @ Food Your Way Healthy Green Bean Casserole @ Heart of Cooking and recommended at Whole New Mom Sweet Potato Casserole @ 100 Days of Real Food *Pumpkin Pie @ Heavenly Homemakers *Maple Pecan Pie @ Simple Bites I’m also making Cranberry Salad from a recipe given to me by a friend who owned a tea room years ago. However,it’s not real food entirely since it uses white sugar and cherry jello. Any suggestions for how to change it for next year? Happy Thanksgiving! Just as we’ve discussed adding healthy, nutritious fruits and vegetables with lots of color to our diets;God wants us to add some things to our spiritual diets that will add color to our lives. Partaking of these five “foods”daily will keep us strong and healthy as Christians. 1. Study of His Word. The essence of our spiritual food is the living, breathing Word of God. As we read the Bible and seek to understand its meaning,we receive a more abundant life through comprehending God’s message to us. 2. Communion with Him in Prayer. Just as a great dinner is aided by the fellowship of others around a table,so is the nutrition of God’s Word by prayer fellowship with Him. He applies His Words directly to our hearts, and we build sweet fellowship as we praise Him.
3. Victory in Temptation. I did not say we have victory over temptation. Every Christian will be tempted to sin. However,as we spend more time with the real food of God,the temptation to lesser foods becomes less appealing. Even when we are tempted to ditch the sweet fruits of the Spirit for a bag of Satan’s “potato chips’,we can be victorious and say,“No!”
4. Joyful Living. If you’ve ever seen a child fully enjoying an apple, you know how important joy is to the Christian life. They chomp and slurp, juice running down their chin, and don’t care what anyone thinks. They are just loving that delicious fruit! When we have the joy of Christ within us,it must come out in our actions and attitudes. Not in a pretentious way. If we have the real thing, our joy will naturally flow out so others can see how much we love our salvation.
5. Being Others-Focused. Keeping a delicious meal to oneself is never as enjoyable as a shared meal. When we feed others by showing them love, kindness, forgiveness and mercy;our lives are in line with how Christ lived His own life. So,go ahead. Have all the spiritual fruits and vegetables you can hold. But these five are absolutely essential to maintain a healthy relationship with God! We’ve all heard the “Five A Day”slogan to encourage our kids to eat more fruits and veggies. Some even encourage us to have them eat a rainbow meaning many different colors. This gave our family a fun idea. We decided to chart not only the fruits and veggies we ate through the day but also what colors we ate. Our only rule was the fruit or veggie had to be recognizable as it was in its original state. For example, applesauce didn’t count for apples, but we did allow dried fruit to count. After each meal,we got out our individual pieces of white printer paper and colored with colored pencils on our rainbows. For breakfast one had grapes and someone had blackberries. Most everyone added dried cranberries to their granola. The kids were excited to color one arc of the rainbow purple for grapes and another red for the cranberries. When lunch came around, one of the kids asked if they could warm up some leftover green beans from the night before. I nonchalantly replied,“Sure,”but inside I was beaming. It was working! By the end of the day,we each had an impressive rainbow. And through the day,we had much more enjoyable and delicious meals. What methods do you try to get your children to eat their colors? Although I’m largely interested in whole foods, herbal medicine hasn’t really been my thing. My dad had a friend that was an iridologist once who offered to evaluate him. After looking into my dad’s eyes and pushing on his arm while my dad held a bottle of pills in it,he decided he needed about $100 worth of supplements a month. With all due respect to the field, that caused my quite skeptical self much….um….skepticism (to put it nicely). Anyway, since I’ve been interested in food,I have had to admit that God made herbs and they must be good for health. I read Shonda Parker’s book and found it fascinating although a bit overwhelming.
In it she recommends Tri-Light Health products. I checked out the site and thought the products sounded wonderful….if they worked. Well,I’ve finally got a chance to try one of them, due to the generosity of the team at Tri-Light Health. Since my kids are plagued with a chronic,allergy-related cough;night time can be difficult. When one or two of them get to “hacking”,it seems like I don’t get much sleep, not to mention them. The people at Tri-Light Health recommended Lungs Plus. I have given it to three of my children before bed or even if they start coughing in the middle of the night, and it just stops! It’s amazing, but a scant 1/4 teaspoon for my little guys and 1/2 t. for my bigger guy completely takes the cough away. Mixed in water, the little ones don’t notice the taste. My older one says he can taste it,but he takes it like a trooper when he’s having cough trouble. With all the concern about children’s cough medicines and the dangers in many children’s over-the-counter drugs, this makes me feel more confident and works better than anything else I’ve tried! Would you like to have your own bottle of Lungs Plus for cold and flu season? Tri-Light Health is offering one of my readers a bottle for your own medicine herbal cabinet! It’s not a new concept,of course. Slow food is how we have nourished our families since the beginning of time, but that was when there weren’t any “quick”options. Life in general used to be slower. The fast pace of our society is,in part, due to all the demands we place upon ourselves in this modern, technological age. However,I think the place where we really suffer while we push the fast forward button on life is our spirituality. A heart-nourishing relationship with God cannot be maintained on drive-through prayers and watered down, previously frozen Bible study. I challenge you to take the time today to really savor the truth of God’s Word and to kneel before Him in the midst of busyness to digest those truths. When it comes to loving God,there are no shortcuts. |
